Ingredients – Serves 1

  • 10g carrots
  • 2g coriander
  • 2g mint
  • 10g peanuts
  • 50g sweet chilli sauce
  • 20g cucumber
  • 30g lettuce Lollo Biondi (the prettiest lettuce in our opinion, but other varieties would work too!)
  • 1g salad cress

Method

  1. Julienne cut lettuce, carrot, and cucumber.
  2. Soak the rice paper in warm water until soft and clear/transparent. Arrange all ingredients on the rice paper and roll tightly.
  3. Cut summer rolls into halves and place them on a plate.
  4. Pour the peanut and sweet chilli sauce over the rolls and garnish with salad cress.
