Ingredients – Serves 1
- 10g carrots
- 2g coriander
- 2g mint
- 10g peanuts
- 50g sweet chilli sauce
- 20g cucumber
- 30g lettuce Lollo Biondi (the prettiest lettuce in our opinion, but other varieties would work too!)
- 1g salad cress
Method
- Julienne cut lettuce, carrot, and cucumber.
- Soak the rice paper in warm water until soft and clear/transparent. Arrange all ingredients on the rice paper and roll tightly.
- Cut summer rolls into halves and place them on a plate.
- Pour the peanut and sweet chilli sauce over the rolls and garnish with salad cress.
